Codex Alimentarius – certification stages

The certification process conducted by EVOCERT is transparent and tailored to the size and specific needs of the facility. We offer organizational and substantive support at every stage.


This voluntary step allows for an assessment of the level of readiness for the actual certification audit. During the visit, the EVOCERT auditor:

  • analyzes the level of HACCP system implementation,
  • identifies any gaps and non-compliances,
  • identifies necessary actions to be implemented before the certification audit.

The pre-audit does not end with the issuance of an audit report.


The EVOCERT audit team performs a detailed assessment of the system documentation, checking whether:

  • the HACCP plan contains all required elements,
  • risks have been properly identified,
  • critical control points (CCPs) have been identified and described,
  • monitoring, verification, and corrective action procedures are in place,
  • documentation is current, consistent, transparent, and appropriate to the facility's operations.

This is a crucial step in the entire process. During an EVOCERT on-site audit:

  • evaluates the implementation of the system in practice,
  • verifies compliance of processes with documentation,
  • checks operational and hygiene activities,
  • conducts conversations with employees and monitors compliance with procedures.

The result of the audit is a report containing any non-conformities for which corrective actions should be taken before a certificate is issued.


If the system meets all requirements, EVOCERT issues a Codex Alimentarius certificate valid for 36 months (3 years). This certificate confirms:

  • the effective implementation of the system,
  • compliance with Codex Alimentarius requirements,
  • the organization's ability to manage food safety.

In order for the certificate to remain valid for its full period, it is necessary to carry out annual surveillance audits. Their goal is to:

  • check whether the system is still effective,
  • assess whether the implemented changes have been appropriately reflected in the plan,
  • monitor compliance with legal and industry requirements,
  • identify areas for further improvement.

Three years after the certificate issuance, a full recertification audit is conducted. The scope and process of this audit are similar to the initial certification – all system elements and their practical effectiveness are verified. A positive audit result allows for the certificate to be renewed for another three-year period.
